JOB TITLE:            SENIOR CHEF
DIVISION:             FINANCE AND ADMINISTRATION DIVISION
KIA SCALE:           6
RESPONSIBLE TO: HOSPITALITY MANAGER


JOB PURPOSE
Plan direct and supervise the food preparation and cooking and serving activities of  several kitchen and dining halls.

DUTIES AND RESPONSIBILITIES
1.    Cook in quantity and quality
2.    Conduct training of kitchen staff
3.    Direct food and beverage production
4.    Manage food and beverage costs
5.    Check quantity and quality of delivered supplies
6.    Coordinate planning, budgeting and purchasing for all food operations at the institute
7.    Arrange for equipment purchases and repairs
8.    Investigate and report on all customer complaints.
9.    Ensure regulatory compliance with in the kitchen domain
10.    Carry out any other assignments as may be assigned by the supervisor
COMPETENCIES SKILLS AND EXPERIENCE
Be able to demonstrate:

•    Possession of  diploma in food production
•    At least ten years catering experience in a busy environment 
•    Excellent inter personal and communication skills
•    Analytical and problem solving skills
•    Must be a team player
•    In depth knowledge of culinary arts including cooking. Baking and food presentation.
•    General knowledge of business management principles, strategic planning and resource allocation.
